Surrounded by a walled-garden, The Ethicurean might be the most perfectly located restaurant we’ve ever come across. Not only is the Michelin Green Star holder surrounded by an organic farm, which supplies the majority of their fruit and vegetables, but beyond the walled garden is the most magnificent view of the mendip hills. Head Chef Mark McCabe is changing how we see sustainable gastronomy. He took over from the previous head chef in 2019, and has imbued the philosophy of the restaurant with an even stronger sustainable direction. Today he runs most of the most exciting kitchens in the country and I can’t wait to show it to you.
